Canola oil

Canola oil is a vegetable oil derived from a variety of rapeseed that is low in erucic acid, as opposed to colza oil. There are both edible and industrial forms produced from the seed of any of several cultivars of the plant family Brassicaceae. Made from crushed canola seeds, it is one of the best oils for heart health. Canola oil has less saturated fat than many other oils commonly used.

Applications

  • Cooking oil. Widely used for sautéing, stir-frying, grilling and baking in home kitchens, restaurants and food processing.
  • Food manufacturing. A common ingredient in processed and packaged foods requiring a neutral, heart-healthy oil.

Characteristics

  • Fat profile. Low in saturated fat and erucic acid compared to other vegetable oils, with a light, neutral flavour.
